  • Preheat oven to 300 degrees F.

  • Line a baking sheet with parchment paper or a silicone baking mat. Lightly grease parchment paper or baking mat with cooking spray or butter.

  • Separate egg whites from egg yolks.

  • Using a hand held electric mixer, whip the egg whites and cream of tartar until stiff peaks have formed.

  • In a different bowl, use the hand held mixer to beat the softened cream cheese, egg yolks, and salt until smooth. Add in the psyllium husk and baking powder.

  • Using a spatula, gently and carefully fold the egg whites into the cream cheese mixture. Be very gentle here as you don't want to break down the structure of the egg whites.

  • Scoop the mixture into 8 cloud bread pieces onto the lined and greased baking sheet. Bake until golden, about 25 to 30 minutes.

      Hi Chris, thanks for checking out the recipe. The cloud bread comes in at under 1 gram of carbs per serving (if I remember correctly, it was under .5 grams) and the recipe software rounds down to zero carbs. I will put this information in the recipe notes when it is updated.

        I tried these pillowed buffs. They did not have any body to them. The egg whites with the tarter didn’t peak the way that I hoped. I did not have psyllium husk but instead I subed it with Brown Flax seed. I think the problem was the egg whites. If you guys have any other suggestions to make them look like fluffy billow wraps.

      I haven’t tried this recipe with anything other than cream cheese. The cream cheese is a pretty integral part of this recipe and is something I consider a “keto staple.” With that said, you could try using mascarpone cheese as a substitute. Or, take full-fat cottage cheese, blend it up in the food processor or blender, and use that as a substitute. Whatever you do choose as a substitute, make sure it has plenty of fat in it. Hope this helps!

      Hi Lisa, yes, the cream of tartar is very important to this recipe. When we beat the egg whites with the cream of tartar, it helps the egg whites achieve maximum volume and stabilizes them so we get the firm peaks the recipe calls for.
