Pecan Crusted Chicken Recipe

If you’re looking for a simple light recipe for the week that packs protein and flavor then this Pecan Crusted Chicken is it! Lately, my favorite protein has been chicken especially as I’ve been counting my macros a little bit more. Chicken has less saturated fat than beef and even some fishes. And since I’m the “boss” in the kitchen, the other humans in my house eat what I give them. haha. In the words of my son, “you get what you get and you don’t throw a fit.”

An easy way to add flavor to any dish is to coat it with goodness! In this case, with tasty hearty pecans! This Pecan Crusted Chicken has been in my repertoire for a while now so I thought I would share the love. 🙂 You can serve it plain, over zucchini noodles or it’s the perfect compliment with any salad! In fact, I’ve actually paired it with a Mango Couscous Salad and it was divine!

How to Make Pecan Crusted Chicken?

  1. To a medium bowl add finely chopped raw pecans, smoked paprika and garlic powder. Mix until incorporated.
  2. Pat chicken breasts dry. Dredge each chicken breast front and back in egg white mixture then in the pecan mixture. Make sure to press the pecan mix into the chicken breasts good.
  3. Place coated chicken breasts on a plate and put in the refrigerator covered for 30 minutes.
  4. Heat a large skillet to medium high heat. Add avocado oil to pan and place chicken breasts in skillet.
  5. Sauté chicken for 5-6 minutes per side.
  6. Remove chicken from the pan and salt immediately.
  7. Let sit for 3-4 minutes to cool down and enjoy! 🙂

How to make Pecan Crusted Chicken in the oven?

  1. Preheat oven to 400° F.
  2. In a shallow dish, lightly beat egg white. In another shallow bowl, combine pecans, smoked paprika and garlicpowder. Drench chicken in egg whites, then roll in raw pecan mixture. Pressing the pecans into both sides.
  3. Place coated pecans in a greased 15x10x1-in.bakingpan. Bake, uncovered, 25minutesor until a thermometer reads 165°.

This Pecan Crusted Chicken is Keto, Low Carb and high in protein.

This chicken dish can definitely be served plain, however if you want to keep it light I added raw zucchini noodles and sautéed burst cherry tomatoes for a light refreshing summer dish the family will love. It’s great for dinner or easy lunch prep for the week, trust me I’ve been eating it all week!
