I have quite a few iyengar recipes in my blog. All the credits go to my friend, She taught me lots of her and her mum's recipe. They all turned out great. You can check out all those recipes here.
This is one of the recipe which she bought to lunch one day. I asked her the recipe and she gave me, this as month's back. I always wanted to try this recipe for a very long time and finally the day arrived yesterday and i gave it a shot. The result was exactly same as hers.

About Paruppu Usili Recipe
Parupp usilli is a popular Tamil dish. Its made by frying toor dal and Bengal gramme dal with red chilies and french beans/cluster beans/plantain flowers, then seasoning it with asafoetida, curry leaves, and mustard seeds. During a meal, it is usually served with rice and mor kuzhambu.
The combination of little crispy and spicy dal cooked along with the soft tender beans was amazing. It goes perfectly with any spicy gravies. You can check out all the kulambu recipe here.
Ingredients for Parupppu Usili Recipe
Green Beans:
Green Beans have a sweet flavour and cook quickly. So, while you can cook potatoes and beans together, the beans will overcook and lose their natural colour and flavour.
Dry Red Chilli :
Dry red chilli is a condiment that enhances the flavour and colour of food. It contains medicinal and hom*oeopathic properties. We provide red chillies that are uniform in shape and size. It is mostly used to season foods. The chillies have a strong flavour.

How to Make Paruppu Usili Recipe (Beans Paruppu Usili Recipe)
- Start by Washing the dal. Now Soak toor dal for 1 to 2 hours. Drain them and set aside.
- Take beans and salt in a saucepan and cover it with water. Bring it to boil and cook it for 10 mins till the beans is cooked. Drain it and set aside.
- Take dry red chilli, salt, asafoetida, turmeric in a blender and blend them first. Once they are blended add in toor dal and make them to a coarse puree.
- Heat oil in a kadai. Add in mustard and urad dal and let it sizzle.
- Now add in the pureed dal mixture and keep frying till it becomes crumbles and gets cooked. It will take around 10 mins.
- Now add in the cooked beans and mix well with the dal. Taste and adjust the seasoning.
- Stir fry this for 5 to 8 mins till everything is combined.
- Serve hot with rice and any spicy gravy like pulikulambu.

Ingredients
- Green Beans - 20 chopped finely
- Toor Dal - 1 cup
- Dry Red Chilli - 6
- Asafoetida / Hing / Kaya Podi - ½ tsp
- Turmeric Powder / Manjal Podi - 1 tsp
- Oil - 4 tblspn
- Mustard Seeds / Kaduku - 1 tsp
- Urad dal / Ulundam Paruppu - 1 tsp
- Salt to taste

My SIL steams the dhal mixture, adds it to seasoning and cooks for a few minutes before adding the beans.

As an indian food lover from the Netherlands , I just prepared this dish and I liked it very much. I added fried onions though. One thing I don't understand : often there is one or two teaspoons urad dal reqired in recipes, what is the influence of such a small amount urad dal on the recipe. Can somebody explain this to me ?
